TL;DR Volumes 01 to 11 (LuCaZ) with the original colour pages (Viz Media) added back in + bonus content
It was bothering me that the official volume releases of Chainsaw Man only included greyscale versions of the coloured pages from the original run. So I re-added them!
FYI this is 95% the same as the release made by LuCaZ.
Colour pages were sourced from Viz Media. These are NOT translations of the official fully coloured edition of the manga. These are also NOT from the fan-made coloured edition either. These are the colour pages which each chapter was published with originally. Sadly, this does mean that some coloured pages still have credits/titles which the original volume does not include.
These are the highest quality versions of the colour pages I could find. And probably will remain the highest quality available unless the official fully coloured edition of the manga gets translated.
I made some minimal edits to get the page as close as I could to the greyscale page it was replacing. This includes upscaling with Waifux2 and crop to match resolution and aspect ratio.
In my opinion, this is the best way to currently read the manga as it was intended to be read.

In case you just want to grab the colour pages, I included them (along with their untranslated official colour editions) separately in the Original Colour Panels.zip
folder for your reference.

Oops turns out the Colored Council versions (fan-made full colour) of these panels probably would have been a better source. They edited out some of the titles and credits that the Viz panels have.
As it is currently, this version is good enough for my standards - but there are definitely improvements which could still be made for the ultimate archival copy. Hopefully this inspires someone to make it!
